The key difference in white pepper production lies in its post-harvest processing:

        After harvesting, ripe red pepper berries are soaked in clean running water or stagnant water for 7–10 days.

        During this time, the outer skin (pericarp) softens and decomposes, making it easier to remove.

        Some farmers use slow-flowing streams to naturally remove the softened skin.

        After fermentation, the berries are rubbed by hand or mechanically to remove the outer skin.

        The remaining white-colored seed is then thoroughly washed to remove any remaining pulp.

        The cleaned white peppercorns are sun-dried for 3–5 days until they reach a moisture content of 10–12%.

        Proper drying prevents mold formation and ensures long-term storage.

        Some commercial producers use artificial drying at 50°C–60°C for faster processing.

        Once dried, the white pepper is sorted based on size, color, and quality.

        Grading ensures uniform appearance and flavor for export or market sale.

Packaging and Market:

        White pepper is packed in airtight containers or vacuum-sealed bags to retain aroma and freshness.

        Stored in cool, dry places to prevent moisture absorption and spoilage.

        White pepper is widely used in cuisines, sauces, and soups, particularly where a lighter color is preferred.

        It is also valued for its medicinal properties in traditional medicine.
